SHANE MICHAEL
General Manager
Shane brings a wealth of experience in hospitality and management to his role. Inspired by Australia’s multicultural influences and his travels to Italy, he has developed a deep appreciation for Italian cuisine. Shane believes cuisine tells the stories of our heritage and strives to create memorable dining experiences.
SCOTT SOLOMON
Head Chef
Chef Scott has a rich culinary background, having refined his skills in Germany and spent nearly a decade mentoring under Jamie Oliver in the UK. Joining Julio’s as Head Chef in mid-2024, he is passionate about Italian cuisine and committed to using high-quality, seasonal produce. Scott emphasises that food should tell a story, ensuring every dish is flavourful and enjoyable.
SHARANG BHAN
Restaurant Manager
Sharang, the Restaurant Manager at Julio’s, has extensive experience across various brands and cuisines. With a degree in hospitality, he brings a well-rounded perspective to food and beverage service. Sharang believes food unites people and aims to create shared dining experiences that resonate with every guest.
